We have a simple wine mission at Eastcut. Share quality wine with our community and hopefully spark a few wine journeys in the process. But wine at a sandwich shop? Before you scoff, give it a try! We love this stuff and together with our distributor and importer partners, we've compiled some pretty rad picks. We're focusing on food-friendly wines (lively acidity) that pair well with our menu – this will skew towards Old World (Europe) with other fun selections sprinkled in. We hope you enjoy our small, mighty, and rotating list - quality picks crafted by real artisans in limited quantities. And the final good news - we're ditching the traditional restaurant mark-ups (typically 3x or more) and offering these gems for a song. Cheers!

Who: Sebastiano Ricci

BOTT FRÈRES
Where: Ribeauvillé | Alsace, France
Who: Nicole Bott and Gladys Wintermantel
Story: Established in 1835, Bott-Frères is a 7th generation family-owned and operated winery. Average vine age at the domaine is 35 years. Grapes include Sylvaner, Pinot Blanc, Muscat, Riesling, Pinot Gris, and Pinot Noir. (credit: Jay Murrie)

VENTURINI BALDINI
Where: Roncolo | Emilia-Romagna, Italy
Who: Giuseppe and Julia Prestia
Story: Founded in 1976 on a historic estate in the hills between Parma and Reggio Emilia. One of the first organic-certified vineyards in the region. Situated at 300-400 meters elevation, focusing on a variety of grapes - Sorbara, Grasparossa, Salamino, Pinot Nero, Meunier, and Grigio.

AMEZTOI
Where: Getaria | Basque, Spain
Who: Ignacio Ameztoi
Story: Fifth-generation winemaker - Ameztoi is perched in the hills of Getaria overlooking the Bay of Biscay. This vineyard has driven much innovation in Txakoli and is credited for inventing Txakolina Rosé.

COS
Where: Vittoria | Sicily, Italy
Who: Giusto Occhipinti and Giambattista Cilia
Story: Founded in 1980 by three friends - Giambattista Cilia, Cirino Strano and Giusto Occhipinti. The acronym of their last names forms the winery’s name – COS. Focused on biodynamic farming and aging in terracotta amphorae - this group led the way for Cerasuola di Vittoria’s DOCG classification.

MATTEO Correggia
Where: Roero | Piemonte, Italy
Who: Ornella Costa Correggia
Story: Founded in 1985 by the alte Matteo Correggia, the vineyard is now directed by his wife Ornella with a keen focus on sustainable agriculture. Correggia paved the way for quality red wine in Roero, which was primarily known for its white grape, Arneis, and bulk wine production.

GIROLAMO RUSSO
Where: Mt. Etna | Sicily, Italy
Who: Giuseppe Russo
Story: Re-established in 2005 by Giuseppe and dedicated to the memory of his father Girolamo. Set on the north slope of the mountain, at an elevation of 650-780 metres, surrounded by hazelnut and olive groves. Farming organically, the vineyard focuses on Nerello Mascalese and Nerella Cappuccio for red wines, plus a variety of indigenous white grapes like Carricante, Catarratto, and Grecanico.
